I observe, <br /> during my inspection, cooler drawers are kept open during the cooking process. No reported illness by employees. No employees working for other food <br /> facilities, day care or health care facilities.Valid food handler cards are sent to inspector during my inspection. Staff <br /> consuming food eaten by complainant. No out of the country traveling by employees. <br /> All food items on the cold hold have temp 41 F or below.All food items on the hot hold have temp at 135F or more. <br /> Carnitas(pork)is received frozen. defrosted then cooked then kept in the 4 drawers cooler or walk in cooler to be cooked on <br /> the griddle to serve. <br /> Sanitizer buckets are set up with chlorine 100 ppm.All hand sinks are at 100F or above and fully supplied with soap and <br /> paper towels from dispensers and fully accessible. Gloves are available. I observe one of employees washing hands between <br /> tasks during my inspection.
