Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:The counter 2 dr Glo-Ray warmer was 102 F. The empanada in the Glo-Ray was 116 F. Keep all <br /> potentially hazardous food at 135 F or above for hot holding,41 F or below for cold holding, or utilize time control. Corrected <br /> on site. Manager said they will utilize time control and discard the food items in the warmer after 4 hours.Wrote notes for <br /> discard times for food items, empanadas at 2 pm and the fried bananas at 1 PM.Adjust warmer to hold foods at 135 F or <br /> above today or repair within 1 week. Continue using time control until and maintain records/documentation if warmer will <br /> continue to be used when it does not reach 135 F or above. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Provide paper towels in dispenser today. <br /> Kitchen hand sink had temporary pump style soap. Provide wall mounted soap dispenser within 2 weeks. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair. (113953, 113953.1, 114067(f)) <br /> #23 Rodents, Insects or Animals Inside Facility <br /> OBSERVATIONS:Observed live cockroaches in the following areas on floor in kitchen near dry storage, on floor outside <br /> restroom , and on wall behind front counter. Observed several dead cockroaches in kitchen on floor under sinks and <br /> shelves, in customer area behind display shelves and in display shelf cabinets, and under open reach-in freezer lid in <br /> customer area. Per manager the facility is serviced every 3 weeks by AAI. Clean and sanitize these areas immediately and <br /> increase pest control measures.
