All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: Observed ice accumulation in 1 dr Frigidaire upright freezer on top and shelves. Clean and sanitize <br />within 2 weeks and maintain clean. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). Provide accurate thermometers in an easily visible location within 2 weeks. <br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods <br />and high temperature warewashing machines. (114157, 114159) <br /> #40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: Observed wiping cloths stored on 2 dr Turbo Air prep top. Store wiping cloths in sanitizing solution with <br />100 ppm chlorine minimum when not in use. Corrected on site, wiping cloths stored in sanitizer bucket with 200 ppm <br />chlorine. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3 (d-e)) <br /> #44 Premises: Clean/Litter Free; Vermin-Proof <br />OBSERVATIONS: Observed empty boxes near fryer. Discard empty boxes to keep facility litter free.
