All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Lacking food safety certificate. Provide food safety certificate within 60 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: The chicken nuggets under the heat lamp were 127 F. Per owner the food is only placed under the heat <br />lamps from 10 AM - 1 PM, there was no documentation available. Maintain proper documentation/records when using time <br />as the public health control. Correct today. <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: Observed some rodent droppings on market canned food shelf. Clean and sanitize with 100 ppm <br />chlorine minimum and increase pest control measures as necessary. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #32 Food Properly Labeled and Honestly Presented <br />OBSERVATIONS: The ice display freezer was lacking sign stating that the ice is made and packaged at this facility, with the <br />address included. Post sign today. <br />CALCODE DESCRIPTION: Any food is misbranded if its labeling is false or misleading, if it is offered for sale under the name of another <br />food, or if it is an imitation of another food for which a definition and standard of identity has been established by regulation.
