Clean today and maintain clean. <br />Observed foam insulation in ceiling of walk-in cooler and taped cardboard on the ceiling of the walk-in freezer. Provide <br />cleanable surface. Correct within 2 weeks. <br />Observed damaged/missing coving in bakery kitchen and main kitchen. Replace within 2 weeks. <br />Observed gaps/holes in wall around walk-in in main kitchen and in the female restroom. Patch/repair within 1 month. <br />Observed damaged/missing floor tiles in front counter area, bakery kitchen area, and main kitchen area. Observed peeling <br />flooring in the female restroom. Replace with approved flooring within 2 months. <br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
