All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The 2 dr reach-in and the ovenroasted chicken at the front counter were both 43 F. Keep front counter <br />covers down when prep table is not in use. Provide 41 F or below today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: The water at the 3 comp sink and prep sink was 118 F and 113 F respectively, observed water temp <br />fluctuating between 112-118 F and 107-113 F. Provide hot and cold water with hot water at 120 F minimum and a consistent <br />water temperature. Correct today. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: The back room hand sink soap dispenser was in disrepair. Repair/replace within 3 days. <br />Observed an ice block on the right side of the 2 dr reach-in. Clean within 3 days and repair as necessary. <br />Observed ice accumulation on ceiling, wall, floor, and door of walk-in freezer. Clean within 1 week and repair as necessary. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. Provide minimum 200 ppm <br />quat sanitizing solution in sanitizer buckets for wiping clothes. Correct on site, sanitizer buckets were 200 ppm quat. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
