All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Lacking food handler cards. Provide food handler cards for all food handling employees within 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: The soap and paper towel dispenser at the warewash hand sink were empty. Provide soap and paper <br />towels in dispensers immediately. <br />The paper towels in both restrooms were empty, the paper towel rolls were on the counter and on top of the dispenser. <br />Provide paper towels in dispenser today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: Observed 1 dead cockroach in container on kitchen floor that was used to catch the leaking from the ice <br />machine discharge pipe. Clean and increase pest control measures as necessary. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed meat being thawed in the 2 comp sink in standing water. Thaw meat using an approved <br />method such as under refrigeration or submerged under cold running water. Corrected on site, the water was turned on. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process.
