For hot holding provide 135 F or above for potentially hazardous foods at all times. If time will be utilized as <br /> a public health control instead maintain records/documentation for max 4 hour hold time for potentially hazardous foods. <br /> Corrected on site,food items were within 4 hour hold time. Discard any foods that have not been sold after the 4 hour hold <br /> time. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Provide soap in dispenser today. <br /> The paper towel dispenser for the front counter hand sink was empty, the paper towel was on top of the dispenser.
