The owner was there. I informed the <br />owner of the complaint above. The owner was not aware of any complaints <br />regarding this matter. The owner allowed me to on board the vehicle to inspect. <br />The meat for Al Pastor is obtained daily and prepared daily. The meat is cooked <br />on the griddle and placed on the steam table, currently at 156 F. The food is <br />prepared to order. The condiments, onion, cilantro, and salsas are being stored in <br />the preparation table at 41 F or below. These condiments are prepared daily, they <br />are washed and cut and placed on the preparation table. The preparation table is <br />currently at 48 F. The generator has not been turned on, per owner. They have <br />just arrived from the commissary, and will start the generator. <br />The owner stated that no one drinks beer during work. I did not see any beer in the <br />vehicle. <br />The hand washing sink is cluttered with an ice chest. Remove all items from the <br />sink and make it accessibly for hand washing. Make paper towels and soap from <br />dispensers available at all times. Per owner, they use the 3 compartment sink for <br />washing their hands. <br />Complaint:COMPLAINANT ORDERED TACOS DE AL PASTOR, (PORK, ONION, <br />CILANTRO, AND SALSA).
