Ramirez, Stephanie [EHD]
From: Ramirez, Stephanie [EHD]
Sent: Monday, December 13, 2021 3:17 PM
To: Davis Mahoney
Subject: RE: Crumble Cookie
Attachments: C00054496 2624 W Kettleman Ln. ;Just Dough it Crumb] Cookie Lodi.pdf
Davis,
Please find the attached compliant investigation report from 12/8/2021.
I discussed the butter being out at room temperature to soften with my Program Coordinator and Lead Senior.
We have determined that you may keep the butter out to soften overnight.
Thank you,
Stephanie Ramirez, Senior REHS
San Joaquin County
Environmental Health Department
1868 E. HazeIton Ave.
Stockton, CA 95205
(209) 616-3069
From: Davis Mahoney <mahoneyd85@gmail.com >
Sent: Wednesday, December 8, 2021 5:01 PM
To: Ramirez, Stephanie [EHD] <sramirez@sjgov.org >
Subject: Re: Crumble Cookie
CAUTION: This email is originated from outside of the organization. Do not click links or open attachments unless you recognize the
sender and know the content is safe.
Hello!
I forwarded this email to my store email so I have it in the record.
I know that it isn't necessarily a "policy" on the butter, it was simply how it was setup originally (by I believe corporate)
when I took over the store. I do know (as stated during my inital corporate training that having the butter sit for around
2 -3 days is vital and wholly necessary to the mixing process in order to ensure the butter is soft enough to be mixed and
baked properly. I do know that we are conforming with local guidelines to the best of our ability and are willing to
change and conform to whatever needed as necessary.
This is the information to the best of my knowledge I can provide.
Davis Mahoney
Crumbl Cookies - Lodi
209-642-1542
1
