SAN JOAQUIN <br /> Environmental Health Department <br />COUNTY <br />Food Program Complaint Inspection Report <br />Facility Name and Address: CASA FLORES RESTAURANT, 3499 BROOKSIDE RD, STOCKTON 95219 <br />Per the manager these sauces cool for an hour and a half and are placed into the walk-in. <br />I observed rice on the steam table hot hold (169F) <br />Red enchilada sauce/hot hold (198F)I observed a red chicken enchilada prepared (143F) <br />I observed food storage areas for tortillas. Tortillas are in closed bags on food storage rack <br />sanitizer bucket is greater than 200ppm (chlorine) <br />Hand sink next to prep line lacks paper towels. Provide paper towels. <br />Paper towels provided, corrected onsite. <br />Owner also stated that toothpicks are used for chimichangas to prevent tortillas from unwrapping. <br />Other items observed: <br />Wall in kitchen area has debris. Clean <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
