All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Owner or operator must take a food safety class/exam within 60 days and provide this department with a <br />copy of the certificate. <br />Maintain at the facility. <br />All other employees must take food handler cards within 30 days of date they start working. Maintain copies at the facility. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: Set up sanitizer solutions for wiping cloths that will be used more than once. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3 (d-e)) <br /> #62 Not in Compliance with Commissary Requirements <br />OBSERVATIONS: Per owner, the facility will be maintained at same commissary. She will have the commissary agreement. <br />CALCODE DESCRIPTION: 1. The mobile food facility fails to operate in conjunction with a commissary a mobile support unit. <br />[§114295(a)] 2. The mobile food facility is not stored in a location approved by the enforcement agency. [§114295(c)] 3. Mobile support <br />unit is not operated out of a commissary. [§114295(d)] <br /> #66 Lack of Protection from Contamination <br />OBSERVATIONS: Entrance door not self-closing. They are installing the self-closing device. <br />CALCODE DESCRIPTION: 1. Employee entrance doors for occupiable mobile food facilities are not selfclosing or not kept closed. <br />[§114303(a)] 2. The mobile food facility and all equipment and utensils are not protected from potential contamination, and not kept clean, <br />not in good repair and not free of vermin. [§114303(b)] 3. Food, food contact surfaces, and utensils are not protected from contamination. <br />[§114303(c)] 4.
