Main St. <br /> Stockton, CA 95206 <br /> <br /> <br />Dear Mr. Perez: <br /> <br />This letter indicates San Joaquin County Environmental Health Department (EHD) approval of <br />drawings submitted for the proposed La Flor De Puebla Bakery, subject to the following <br />condition(s): <br /> <br />1. All plumbing, electrical and gas lines shall be concealed within the building structure to <br />as great as an extent as possible. When otherwise installed, they shall be mounted or <br />enclosed so as to faciliate cleaning (e.g., at least one-half (1/2) ince from the wall and <br />six (6) inches above the floor). [CRFC §114271]. <br /> <br />2. The potable water supply shall be protected with a backflow or back siphonage <br />protection device, when required by applicable plumbing codes. [CRFC §114192, <br />§114193 and §114193.1]. <br /> <br />3. Provide durable shelving which holds foods a minimum of six (6) inches above the floor <br />with finishes that are nonabsorbent, smooth and cleanable. [CRFC §114047]. <br /> <br />4. Provide a designated area for janitorial equipment (mops, brooms, buckets and <br />cleaning supplies). [CRFC §114279 and §114281]. <br /> <br />5. The floor surfaces in all food preparation or packaging area, open food storage areas, <br />utensil washing areas, refuse storage areas, janitorial areas, and all restroom and <br />employee change areas, shall be smooth and of dura ble construction and <br />nonabsorbent material which is easily cleaned. These floor surfaces shall be coved at <br />the juncture at the floor and wall with a three-eighths (3/8) inch minimum radius coving <br />and shall extend up the wall at least four (4) inches. Rubber or vinyl top set base is not <br />permitted in these areas. [CRFC §114268]. <br />
