All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: The food manager certificate and food handler cards were not available during the inspection. Provide <br />food manager certificate within 60 days and email to dafonskaia@sjgov.org once received. Provide food handler cards for <br />employees within 30 days of hiring. Maintain records of certification on site. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: The paper towel dispenser at the kitchen hand sink was empty. Provide paper towels in dispenser. <br />Corrected on site. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: Observed a few dead cockroaches on the floor near the right 1 dr freezer in back storage room. Clean <br />and sanitize area and increase pest control measures as necessary. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed frozen chicken on back storage room table. Per employee they just got it and did not have a <br />chance to put in the walk-in. Provide approved thawing method such as under refrigeration or submerged under cold <br />running water. Corrected on site, chicken was placed in walk-in. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process.
