DBA ESCLON ARCO Date: 03/09/2022 <br /> Address: 1329 Escalon AVE, ESCALON 95320 <br /> Owner/Operator: SARJIWAN SINGH Telephone: (209)838-7579 <br /> Program Element: 1600- FOOD PROGRAM Complaint#: C00054727 <br /> Responsible Party Contact: <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT ALLEGES THAT THE OWNER OF THIS FACILITY DOES NOT LET THE EMPLOYEES THROW <br /> AWAY/REPLACE THE INDIVIDUALLY WRAPPED HAMBURGERS, HOTDOGS ETC.THEY HAVE THE EMPLOYEES <br /> CHANGE THE BAG THAT THE OLD FOOD IS IN AND PLACE IT IN A NEW ONE AND LABEL IT WITH A NEW TIME. <br /> OLD FOOD IS CONSTANTLY BEING SOLD INSTEAD OF BEING DISCARDED <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #8 Use of Time as a Public Health Control <br /> OBSERVATIONS:Time log is not maintained. Food items are heated in the oven at 350F for 10-18 minutes to be held on the warmer <br /> for 3 hours(3 hours time control) <br /> I observe disposal time (3 hours) is posted on all food items in the warmer. <br /> Warmer temp is at 155F during my inspection.
