Per (C), a LIN HARES <br />whole grilled chicken was purchased from the facility yesterday. (C) states that the <br />chicken was cold and when they took a bite from the chicken breast, it appeared <br />raw. Per (C) no illness occurred and (C) did not call the facility. Routine inspection <br />f the facility was conducted 1-3-22. At the time of the inspection, no major <br />violations were identified. However, a minor hot holding violation was identified. <br />Called owner to discuss the complaint. He was unaware of the complaint. I <br />reminded him to maintain hot food at 135F (minimum) after being <br />cooked/re-heated to proper temperature (at least 165F or chicken and re-heated <br />foods).
