Corrected on site, items inside were relocated to a different cooler. <br /> The 4 dr Traulsen warmer was 123 F and the outside thermometer read 128 F. Per Martha Cook the food items in the <br /> warmer were placed 30 minutes ago and rotate quickly due to batch cooking. Corrected on site, the warmer setting was <br /> turned up to 165 F and the outside thermometer read 138 F at the end of the inspection. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #21 Hot and Cold Potable Water Not Available <br /> OBSERVATIONS:Hot water was not available at the counter prep sink near the 3 comp sink. Provide drainage into floor drain and <br /> maintain 1 in. minimum air gap.
