<br /> #1 Demonstration of Knowledge
<br />OBSERVATIONS: Observed 2 expired food handler cards. Provide valid food handler cards for employees within 30 days.
<br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their
<br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an
<br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1,
<br />2011 shall obtain a Food Handler Card within 30 days (113948).

<br />OBSERVATIONS: Observed spinach container stored on top of uncovered lettuce in Kintera prep top. Cover food items
<br />prior to storing anything on top to prevent contamination. Corrected on site, spinach container was removed.

<br />Observed grease build up in exhaust hood. Clean within 1 week and maintain clean.
<br />Observed wooden table counter covered by plastic sheet used for cutting cooked meat. Remove wooden table counter and
<br />provide equipment that is nonabsorbent and approved for commercial kitchen use. Correct within 2 weeks.
