All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Lacking food handler cards for employees. Provide food handler cards for all food handling employees <br />within 30 days and maintain records on site. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed frozen fish submerged in water at 3 comp prep sink and packaged paneer submerged in tub <br />of water at 3 comp prep sink. Provide approved thawing method such was under cold running water or under refrigeration. <br />Corrected on site, the cold water was turned on for both. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed uncovered food items in the right 3 dr True freezer and 3 dr True at the cook line area. <br />Observed uncovered pani purri on shelf in storage room. Cover food items immediately to protect from contamination. <br />Observed bowl used as scoop in lentil pot. Provide scoop with handle and store scoop with handle up not touching the food <br />item if it will be stored in the container. Correct today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. Store cleaning <br />supplies separate or under food and utensils. Corrected on site. <br />CALCODE DESCRIPTION: All poisonous substances, detergents, bleaches, and cleaning compounds shall be stored separate from food, <br />utensils, packing material and food-contact surfaces.
