Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:The sliced tomatoes and mayo at the kitchen counter in the kitchen were 66 F and 63 F respectively. Per <br /> owner they were placed there when they opened around 4:30 AM and that they should be in an ice bath.There was no ice <br /> under food item trays during inspection. Discarded sliced tomatoes and mayo and provide 41 F or below for cold holding of <br /> potentially hazardous food items, if ice bath will be used to keep food items cool then maintain ice level to keep food items at <br /> 41 F or below. Corrected on site,the sliced tomatoes and mayo were discarded. <br /> The walk-in cooler was 43 F. Provide 41 F or below today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #6 Handwashing Facilities Supplied and Accessible <br /> OBSERVATIONS:The paper towel dispensers in the kitchen, paper and restroom were empty or had paper towel rolls or <br /> napkins inside. Provide single use paper towels inside dispensers today. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing,food preparation and the washing of <br /> utensils and equipment.
