Per owner <br /> it is usually not kept for more than 1 hour. No documents or records were available during inspection. Keep food items at <br /> 135 F or above for hot holding. If time will be used as the public health control then maintain time log/documentation and do <br /> not exceed 4 hour max hold time. Corrected on site, owner said that any left over sweet and sour chicken at 3 PM will be <br /> discarded and owner will implement time control for food items at steam table that are not kept at 135 F or above. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Corrected on site. <br /> The customer restroom did not have soap available.
