Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The 1 dr reach-in at the bar server room was 47 F and the 1 dr True reach-in w/prep top in the kitchen <br />was 42 F. Per manager sanitizer <br />dispenser is mainly used for filling sanitizer buckets as utensils are washed in dishwasher. Provide 200 ppm quat minimum <br />at sanitizer dispenser. Corrected on site, sanitizer bag was replaced and dispenser provided 300 ppm quat. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
