(113996, 113998, <br />114037, 114343(a)) <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: The dishwasher did not dispense any sanitizer, the sanitizer dispenser at the 3 comp sink was providing <br />200 ppm quat. Sanitize utensils at 3 comp sink until dishwasher provides 50 ppm chlorine minimum. Corrected on site, the <br />dishwasher provided 50 ppm chlorine. The sanitizer tube was pinched and it was fixed during the inspection. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
