Repair/replace handle. Corrected on site, handle was tightened and it worked properly. Observed debris on bottom of cabinets under soda machine and dump sink. Observe debris on bottom of 1 dr Falcon freezer. Clean today and maintain clean. Observed dust build up on walk-in cooler fan and fan covers. Clean within 5 days and maintain clean. Observed ice accumulation on back of 1 dr Haier display. Clean within 5 days and repair as necessary. Observed debris on exhaust hood filters. Clean within 1 week and maintain clean. Provide accurate thermometers for these units within 1 week. CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods and high temperature warewashing machines. Provide 200 ppm quat minimum sanitizing solution in sanitizer buckets. Corrected on site, it was 300 ppm quat. CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food shall be used only once unless kept in clean water with sanitizer.
