Environmental Health Department <br />Facility Name and Address: BURGERIM, 4027 E MORADA LN, STOCKTON 95212 <br />Food Program Official Inspection Report <br /> #30 Food Storage/Display Properly Labeled <br />OBSERVATIONS: Observed unlabeled container on storage shelf. Label container today. <br />Observed boxes of food items stored on walk-in freezer floor. Store all food items at least 6 in. above floor. Correct today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069 (b)) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: The kitchen 3 comp sink hot water handle did not work, it spun around. Repair/replace handle. Corrected <br />on site, handle was tightened and it worked properly. <br />Observed debris on bottom of cabinets under soda machine and dump sink. Observe debris on bottom of 1 dr Falcon <br />freezer. Clean today and maintain clean. <br />Observed dust build up on walk-in cooler fan and fan covers. Clean within 5 days and maintain clean. <br />Observed ice accumulation on back of 1 dr Haier display. Clean within 5 days and repair as necessary. <br />Observed debris on exhaust hood filters. Clean within 1 week and maintain clean. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. (114130, 114130.1, 114130.2, 114130.3, 114130.4, 114130.5, <br />114132, 114133, 114137, 114139, 114153, 114155, 114163, 114165, 114167, 114169, 114172, 114177, 114180, 114182) <br /> #39 Thermometers Provided/Accurate/Easily Visible <br />OBSERVATIONS: The 1 dr Falcon reach-in and 1 dr Haier display in the front area did not have thermometers. Provide <br />accurate thermometers for these units within 1 week. <br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods <br />and high temperature warewashing machines. (114157, 114159) <br /> #40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: The sanitizer bucket at the front counter did not have any sanitizer. Provide 200 ppm quat minimum <br />sanitizing solution in sanitizer buckets. Corrected on site, it was 300 ppm quat. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
