All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The bus tub of pinto beans is 47F. Owner states that the customer purchased the refried beans on <br />Saturday and then brought them back on Monday and requested a refund. Owner states that the beans were warm and he <br />questioned the complainant if the beans had been refrigerated. The complainant then became argumentative. Owner states <br />that no other similar complaints have been received. <br />Per owner, seasoned & cooked pinto beans are blended, oil is added and then the beans are refried. The beans then go to <br />the steam table. The refried beans at the steam table are changed out 7-8 times per day (used in many dishes). Owner states <br />that any left over refried beans at the end of the day are discarded (are not cooled and then re-heated). <br />We discussed proper cooling techniques. Per owner, the large tubs are not stacked in the walk-in cooler.
