Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: The employee on site this date does not have knowledge of the proper manual warewashing procedure. <br />No sanitizing step was used. All warewashing shall occur at the 3-comp sink using the wash-rinse-sanitize-air dry manual <br />warewashing procedure. <br />The sanitizer level shall be 100 ppm Cl (minimum). <br />Re-educate employees on the proper manual warewashing procedure.
