All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The cold holding temperature inside the 3-dr cooler and walk-n cooler was observed at 47 F for each <br />cooler. Adjust units to maintain 41 F or below. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: Sanitizing test strips were not available at the facility. Obtain sanitizing test strips to ensure proper <br />sanitation of food preparation and contact surfaces, dishes and utensils. Correct within seven days. <br />----------------------------------------------- <br />The sanitizing solution bucket was showing insufficient concentration of sanitizer = 25 PPM chlorine. Provide chlorine <br />concentration between 100 - 200 Parts Per Million (PPM) or quat concentration between 200 - 400 Parts Per Million (PPM) <br />for proper sanitation of all food preparation and contact surfaces. Correct today. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Increase pest control to reduce/eliminate the flies and <br />prevent them from entering the facility. Correct today. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed food items in the walk-in cooler that were not covered. Maintain food items covered with lids or <br />plastic wrap to protect from contamination.
