Cover food items prior to placing anything on top to prevent contamination. Correct immediately. <br /> Observed uncovered food items in 2 dr Atosa reach-in. Cover food items immediately to prevent contamination. <br /> Observed cup used as scoop. Provide scoop with handle to prevent contamination. Correct today. <br /> Observed debris on ice machine deflector plate. Clean today and maintain clean. <br /> CALCODE DESCRIPTION:All food shall be separated and protected from contamination. Store food items in labeled containers once bag has been opened. <br /> Correct today. <br /> Observed unlabeled containers in storage area. Label containers today. <br /> CALCODE DESCRIPTION:Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br /> above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069(b)) <br /> #35 Equipment/Utensils Approved and in Good Repair <br /> OBSERVATIONS:Observed damaged gaskets around chef drawers and some of the drawers did not shut properly. <br /> Repair/replace gasket and drawers so that they shut properly. Correct within 2 weeks. <br /> Observed ice build up around top of freezer chest. Clean within 2 weeks and repair as necessary. <br /> CALCODE DESCRIPTION:All utensils and equipment shall be fully operative and in good repair. Provide accurate thermometers for all refrigeration units within 1 week <br /> CALCODE DESCRIPTION:An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br /> available to the food handler. A thermometer+/-2#F shall be provided for each hot and cold holding unit of potentially hazardous foods <br /> and high temperature warewashing machines.
