See official inspection report. ACEVEDO <br />Upon arrival I spoke with the manager on site in regards to the complaint. The <br />manager stated that the facility has been having some difficulties with some <br />associates but nothing to what the complaint stated. As I conducted my inspection, <br />I started in the taqueria area where I observed dirty pots being placed on the floor <br />and observed clean cooking equipment being stored in locations very close to the <br />floor, under 6 inches. The steam table contained food stacked upon one another <br />and dishes piled upon the hand washing sink. As I made my way towards the back <br />of the facility, I observed flooring and wall damage that has not been repaired for <br />some time. In the walk in cooler it was observed multiple foods not covered to be <br />protected from cross contamination, the flooring is completely bare which exposes <br />the concrete in the bottom and the empty cardboard boxes in every walk in cooler <br />from unpacking new product. Advise workings inside of the carniceria to review <br />their product due to multiple boxes and bags being open with raw product inside. <br />Stated to clean the walk in coolers and separate all product from seasoned to raw <br />meat product. The staff of the taqueria were advised to clean the walk in cooler <br />containing prepared food and cover all food products that are still being used while <br />disposing the rest. Spoke with owner of the facility over the phone in regards ot <br />repairs being made to the walls and floors, owner stated that work with commence <br />immediately.
