SAN JOAQUIN <br /> Environmental Health Department <br />C'LJ N FY <br />Time In: 1:00 pm <br />Time Out: 1:40 pm <br />COMPLAINT INSPECTION REPORT <br />Name of Facility: DONA TERE PERUVIAN RESTAURANT Date: 05/09/2022 <br />Address: 16438 CAMBRIDGE DR, 95330-9544 <br />Owner/Operator: DUCOS, JORGE & DUCOS, DELMY Telephone: (209) 665-7663 <br />Program Element: 1600- FOOD PROGRAM Complaint #: C00054870 <br />Responsible Party Contact: <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />The San Joaquin County Environmental Health Department received the following complaint: <br />COMPLAINANT WENT TO FACILITY ON 4/30/22 AND ORDERED FOOD FOR DINE IN. COMPLAINANT ALLEGES <br />THAT WHEN THEY RECEIVED THEIR FOOD, THE PLATES WERE FILTHY, STICKY WITH OLD GREASE AND DIRT. <br />COMPLAINANT RAN THEIR FINGER ACROSS THE PLATE AND THEIR FINGER WAS BLACK FROM THE DIRT AND <br />CAKED ON GREASE. THE FLOOR LOOKED AS THOUGH IT HADN'T BEEN MOPPED IN MONTHS, AND THE KITCHEN <br />LOOKED A MESS. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#14 Food Contact Surfaces Sanitized or Warewashing San itization Major <br />OBSERVATIONS: Facility is running out of bleach. No sanitizer on site. Sanitizing solution in the sanitizing compartment <br />has chlorine zero ppm. Corrected on site. Operator brings bleach during my inspection. Sanitizing compartment has chlorine <br />at 100 ppm now. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br />#33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: Hood filters have heavy grease accumulation. Clean hood filters today and as needed. <br />Exterior surfaces of the cooking equipment, rotisserie machine, cooling unit at the cooking area, have grease accumulation <br />and splatters. Clean exterior surfaces today. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean.
