COMPLAINANT WORKS IN <br />FOOD INDUSTRY AND RECOGNIZED SMALL REFRIGERATOR IS NOT BEING KEPT PROBABLY COLD. SEAFOOD IN <br />THE FRIDGE (CRAB LEGS, SHRIMP, ETC) HAD MOLD IN CONTAINERS. ALSO THE MACARONI AND CHEESE HAD <br />MOLD GROWING IN CONTAINER. COMPLAINANT TOLD OWNER, RAY, AND COMPLAINANT WAS TOLD THE FOOD <br />SHOULD BE OKAY FOR ONE MORE DAY. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: Paper towel dispensers at all hand sinks were empty, paper towel rolls were near hand sinks. Provide <br />paper towels in wall mounted dispensers today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(t)) <br />I #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The open display cooler was 42 F on the top shelf and 47 F on the bottom shelf. Per owner it was in the <br />middle of defrost during the inspection. Provide 41 F or below in entire unit today and repair if necessary. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br />#32 Food Properly Labeled and Honestly Presented <br />OBSERVATIONS: Lacking labels for some take and go items at open display cooler near front counter. Provide labels for <br />take and go items on each container or at point of service that contain: name and address of facility, common name of <br />product, ingredients listed by weight, and weight of product. Correct today. <br />CALCODE DESCRIPTION: Any food is misbranded if its labeling is false or misleading, if it is offered for sale under the name of another <br />food, or if it is an imitation of another food for which a definition and standard of identity has been established by regulation. Food facilities <br />with 19 or more chains in the state shall disclose nutritional information.
