Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: The Hood Safety Certificate for this facility has expired. One person shall obtain the 5 year Food Safety <br />Certificate within 60 days. Provide a copy to Kadeanne Linhares when obtained (klinhares@sjgov.org). <br />Maria Leticia Hermosillo has the 3 year Food Handler Card which expires 3-30-2025 <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. Food at this unit is 45-48F. Reduce the temperature of this unit (and the <br />potentially hazardous food in it) to 41F or below. The ice machine is located outdoors. <br />2 options: <br />1) Post a sign at the customer freezer that states "Do not eat ice. Use for chilling the outside of food containers only." <br /> 2) Move the ice machine indoors, plumb the ice machine with a 1" airgap to a floor sink and continue to bag ice as food. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination.
