Adjust <br /> the hot water heater to maintain 120 F minimum. Correct today. <br /> The prep sink does not have hot water. Provide hot and cold water at the prep sink. Hot water should be at a minimum of <br /> 120F. Provide a <br /> metal splashguard with a height of at least 6 inches to avoid food contamination.
