All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Several food items were observed open without lids in the walk-in cooler and one door True prep top <br />reach-in cooler. Cover all food to prevent cross contamination. Correct today. (REPEAT) <br />Observed foil and cloth shelf liners on the shelves in the kitchen. Remove foil and cloth as they are not cleanable surfaces to <br />protect food prep and storage areas from contamination. (113984 (a, b, c, d, f), 113986, 114060, <br />114067(a, d, e, j), 114069(a, b), 114077, 114089.1 (c), 114143 (c)) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: The griddle area was observed greasy and with food debris on the shelf below the griddle. A pile of <br />greasy cleaning cloths were observed on the floor under the griddle. Detail clean area within three days and maintain clean. <br />The one door True reach-in prep top cooler was observed with food debris on top and inside and spills on the bottom inside. <br />Clean and sanitize cooler and maintain clean. Correct today. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #38 Approved / Sufficient Ventilation and Lighting <br />OBSERVATIONS: Several lights in the kitchen were observed burnt out and without light covers. Adequate lighting shall be <br />provided in all areas to facilitate cleaning and inspection where open food is stored, served, and prepared. Repair/replace <br />non-operational lights and ensure all bulbs are covered or shatterproof. Correct within one week. <br />CALCODE DESCRIPTION: Exhaust hoods shall be provided to remove toxic gases, heat, grease, vapors and smoke and be approved by <br />the local building department. Canopy-type hoods shall extend 6" beyond all cooking equipment. All areas shall have sufficient ventilation <br />to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window, an air shaft, or a <br />light-switch activated exhaust fan, consistent with local building codes. (114149, 114149.1) Adequate lighting shall be provided in all areas <br />to facilitate cleaning and inspection. Light fixtures in areas where open food is stored, served, prepared, and where utensils are washed <br />shall be of shatterproof construction or protected with light shields.
