Environmental Health Department <br />Facility Name and Address: CHILIS GRILL & BAR #504, 5756 PACIFIC AVE, STOCKTON 95207 <br />Food Program Official Inspection Report <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: The small walk-in freezer was observed with ice build-up around the doorway. Clean ice today and <br />ensure freezer door is shut when not in use. <br />The following coolers were observed with spills and food debris on the inside and/or outside: <br />-Two door Delfield reach-in near dipper well <br />-One door prep top reach-in across from chip warmer <br />-One door Delfield prep top reach-in (breading station) <br />Clean and sanitize coolers today. Maintain clean. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: The green shelf closest to the small walk-in freezer was observed with a broken bottom shelf. Repair <br />shelf so that food is stored a minimum of 6 inches above the floor. Correct within two weeks. <br />The one door Micromatic reach-in cooler at the bar was observed with the door broken off. Repair/replace door within two <br />weeks. <br />The two door Delfield near the dipper well has a loose/broken gasket. Repair/replace gasket within two weeks. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. (114130, 114130.1, 114130.2, 114130.3, 114130.4, 114130.5, <br />114132, 114133, 114137, 114139, 114153, 114155, 114163, 114165, 114167, 114169, 114172, 114177, 114180, 114182) <br /> #38 Approved / Sufficient Ventilation and Lighting <br />OBSERVATIONS: One light was non-functional in the hood at the "raw seafood zone". Repair/replace light so that it is in <br />good working order within one week. <br />CALCODE DESCRIPTION: Exhaust hoods shall be provided to remove toxic gases, heat, grease, vapors and smoke and be approved by <br />the local building department. Canopy-type hoods shall extend 6" beyond all cooking equipment. All areas shall have sufficient ventilation <br />to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window, an air shaft, or a <br />light-switch activated exhaust fan, consistent with local building codes. (114149, 114149.1) Adequate lighting shall be provided in all areas <br />to facilitate cleaning and inspection. Light fixtures in areas where open food is stored, served, prepared, and where utensils are washed <br />shall be of shatterproof construction or protected with light shields. (114149.2, 114149.3, 114252, 114252.1) <br /> #39 Thermometers Provided/Accurate/Easily Visible <br />OBSERVATIONS: The following coolers were lacking a thermometer: <br />-One door Delfield prep top reach-in cooler across from chip warmer <br />-One door Delfield reach-in cooler below soup warmers <br />Provide a thermometer for the cooler and place in an easily visible location inside. Correct within 14 days. <br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods <br />and high temperature warewashing machines.
