Went over proper warewashing method <br /> with employee and owner. Utensils must be washed with warm water 100-110 F and detergent,then rinsed, then <br /> submerged in sanitizing solution with at least 100 ppm chlorine, and then air dried. Corrected on site,the sanitize <br /> compartment of the 3 comp sink was set up with 100 ppm chlorine and utensils were placed in the sanitizing solution. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized.
