All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />No Temperature Data Collected <br />FOOD ITEM -- LOCATION -- TEMP º F -- COMMENTS <br />NOTES <br />I went to the facility and spoke to the manager and the chef who are aware of the complaint. <br />Per the manager and chef they believe that the complaint is from a disgruntled employee. <br />I discussed the jambalaya and chili preparation. <br />Jambalaya and chili are made fresh in house. <br />Batches are made and the maximum amount of days that jambalaya and chili is kept in the walk-in is 4 days. <br />I observed jambalaya and chili in the walk-in that are dated 7/15. <br />I did not observe " 12 DAY OLD JAMBALAYA AND CHILLI. " at this time. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
