All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: I observe a lot of dirty utensils, placed in the three compartments of the 3 comp sink. Clean and sanitize <br />utensils today. <br />Dish washer chlorine is zero ppm. Provide chlorine 50 ppm at the dish washer today. Meanwhile use 3 comp sink to <br />manually wash dirty utensils. During my inspection, employee starts to manually wash dirty utensils till dish washer repair. <br />Sanitizer buckets are set up with QUAT<150 ppm. Provide QUAT 200 ppm in sanitizing solution today. Corrected on site. <br />QUAT in sanitizing solution is at 200 ppm now. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
