<br />OBSERVATIONS: I observe asparagus and shrimp are placed on the right side of the griddle to be cooked. Cook uses 2
<br />spatulas to cook it. Then raw meat on the other side of the griddle, is placed to be cooked using different big spatula. When
<br />both kinds of meat are cooked and served on separate plates, all spatulas are placed together at the front edge of the
<br />griddle. Stop this practice immediately. Store spatulas dedicated to cook fish and sea food away from the griddle after done
<br />using them. Clean griddle surface after each time allergen touch the griddle surface. Preferably use a separate cooking unit
<br />and utensils to cook allergen food if you could do so. Correct today to avoid any potential contamination.
<br />I observe employees, at the cook line, using both fryers units to fry all kind of food including the fish. Stop this practice
<br />immediately. Start using one fryer for frying fish and the other fryer for other food. Correct today.

<br />OBSERVATIONS: Hood and surrounding surfaces of filter plates, have some grease accumulation. Clean surfaces today
<br />and as needed.
<br />I observe food debris on the bottom shelf of the back 2 D freezer. Clean bottom shelf today and as needed.

<br />OBSERVATIONS: Walk in cooler has dim light. Provide adequate light to the walk in cooler in 1 week.
<br />CALCODE DESCRIPTION: Exhaust hoods shall be provided to remove toxic gases, heat, grease, vapors and smoke and be approved by
<br />the local building department. Canopy-type hoods shall extend 6" beyond all cooking equipment. All areas shall have sufficient ventilation
<br />to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window, an air shaft, or a
