Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:The 2 dr reach-in under the prep table was 62 F,there was shrimp, eggs, and other food items stored <br /> inside. Maintain potentially hazardous food items at 41 F or below at all times. Do not store PHFs inside this unit until it <br /> provides and 41 F or below. Corrected on site,food items inside unit were discarded and unit will not be used for cold <br /> holding until it is working properly. <br /> The left Hoshizaki counter display was 42 F. Provide 41 F or below today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #23 Rodents, Insects or Animals Inside Facility MAJOR <br /> OBSERVATIONS:Observed live cockroach on prep table in kitchen and some dead cockroaches on counter at sushi bar. <br /> Observed some live cockroaches on floor in kitchen. Facility is serviced by Official Pest Control monthly and the last service <br /> was 8/3/22. Clean and sanitize areas immediately with at least 100 ppm chlorine and increase pest control measures. <br /> Corrected, the cockroach was removed from the prep table and the prep table and sushi bar counter will be cleaned and <br /> sanitized prior to opening at 3. <br /> CALCODE DESCRIPTION:Each food facility shall be kept free of vermin:rodents(rats,mice), cockroaches,flies.(114259.1, 114259.4, <br /> 114259.5) <br /> #22 Disposal of Sewage/Wastewater <br /> OBSERVATIONS:Currently dirty mop water is disposed of behind facility. Discontinue this practice and provide disposal of <br /> wastewater into an approved receptacle such as a floor sink or toilet.
