ARTICLE/SECTION YES NO N/A COMMENTS <br /> 1241 Minimum Diet <br /> The minimum diet provided shall be based upon <br /> the nutritional and caloric requirements found in <br /> the 1999-2002 Dietary Reference Intakes (DRI) <br /> of the Food and Nutrition Board, Institute of <br /> Medicine of the National Academies, the 1990 <br /> California Daily Food Guide, and the 2000 <br /> Dietary Guidelines for Americans. <br /> Temporary holding facilities are required to provide the full X <br /> RDA;however, determining what constitutes a full RDA <br /> presents a problem. Most prisoners in these facilities are in <br /> custody for a few hours with time only for one or two meals. <br /> The problem is determining an acceptable nutritional value <br /> for any one meal. In this instance the intent of the regulation <br /> is best described as requiring the arresting agency to <br /> provide reasonably nutritious meals in their feeding program. <br /> The inspector must take the facility operation into account <br /> and use good judgment when analyzing the food service. <br /> Typically these facilities have frozen dinners in stock or <br /> obtain food from a local restaurant when needed. Both <br /> these options are reasonable. <br /> 1243 Food Service Plan Written Policies Reviewed? ® Yes ❑ No <br /> There is a written food service plan in temporary <br /> holding facilities that complies with the <br /> applicable provisions of the California Retail <br /> Food Law, addresses issues applicable to the X <br /> facility and is available for review in the facility. <br /> The plan shall include, but not limited to, the <br /> following policies andprocedures: <br /> Menu Planning X <br /> Purchasing X <br /> Storage and Inventory Control X <br /> Food Preparation X <br /> Food Serving X <br /> Transporting Food X <br /> Orientation and Ongoing Training X <br /> Personnel Supervision X <br /> Budgets and Food Cost Accounting X <br /> Documentation and Record Keeping X <br /> Emergency Feeding Plan X <br /> Waste management X <br /> Maintenance and Repair X <br /> Summary of Nutritional Health evaluation: <br /> Notes: <br /> Food is occasionally offered to inmates as an incidental meal.
