II.NUTRITIONAL HEALTH EVALUATION <br /> Adult Court and Temporary Holding Facilities <br /> ARTICLE/SECTION YES I NO I N/A COMMENTS <br /> Article 12. Food <br /> 1240 Frequency of Serving <br /> (Not applicable for CH.) X <br /> Food is served three times in any 24-hour period. <br /> At least one meal includes hot food. X <br /> If more than 14 hours passes between these meals, X <br /> supplemental food is served. <br /> Supplemental food is served in less than the 14-hour X <br /> period for inmates on medical diets. <br /> A minimum of fifteen minutes is allowed for the <br /> actual consumption of each meal except for those X <br /> inmates on therapeutic diets where the responsible <br /> physician has prescribed additional time. <br /> Inmates who miss or may miss a regularly scheduled <br /> facility meal,are provided with a sandwich or a X <br /> substitute meal and beverage. <br /> Inmates on therapeutic diets who miss a regularly <br /> scheduled meal,are provided with their prescribed X <br /> meal. <br /> 1241 Minimum Diet(Not applicable for CH.) <br /> Temporary holding facilities are required to provide <br /> the full RDA;however, determining what constitutes <br /> a full RDA presents a problem. Most prisoners in <br /> these facilities are in custody for a few hours with <br /> time for only one or two meals. The problem is <br /> determining an acceptable nutritional value for any <br /> one meal. In this instance the intent of the regulation X <br /> is best described as requiring the arresting agency to <br /> provide reasonably nutritious meals in their feeding <br /> program. The inspector must take the facility <br /> operation into account and use good judgment when <br /> analyzing the food service. Typically these facilities <br /> have frozen dinners in stock or obtain food from a <br /> local restaurant when needed. Both these options <br /> are reasonable. <br /> 1243 Food Service Plan (Not applicable for CH.) <br /> This regulation requires Temporary Holding facilities X <br /> to have a food service plan;however,the intent is <br /> that policies and procedures only address those areas <br /> that apply to the facility operation. <br /> Summary of nutritional health evaluation: <br /> Food service is contracted out to Aramark.
