All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed container of frozen chicken set out at room temp. Provide approved thawing method such as <br />under refrigeration or submerged under cold running water. Corrected on site, chicken was placed in walk-in. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: <br />Observed food containers stored on top of uncovered food items at prep table and reach-in under prep table. Observed <br />uncovered food items inside 4 dr reach-in under prep table. Cover food items immediately to protect from contamination. <br />Observed pan sheet rack with dumplings stored in hallway that goes to customer restroom. Per owner when a customer <br />goes to the restroom they move the sheet rack out of the way. Store dumpling sheet rack in a location that does not have <br />public access to protect food from contamination. Correct immediately. <br />Observed some dumplings stored in white bags in walk-in freezer. Store food items in food grade bags to prevent <br />contamination.
