Facility MURO <br />was unaware of the complaint. <br />Observations: The ranch cups are stored in a cooler and are held at 34 F. The <br />cups are filled and restocked according to the First-In First-Out (FIFO) method <br />and are sold-out often. They are always rotated using the FIFO method per shift <br />manager. The Fontanini sausage is stored in the walk-in cooler and in the Atosa <br />2-door prep cooler at 41 F. No odor was detected from the sausage. Food <br />handling employees were witnessed frequently washing their hands and are <br />current with their food handler certification.
