OBSERVATIONS <br />Name on Food Safety Certificate: Beverly Schimdt Expiration Date: September 23, 2024 <br /> <br />Warewash Chlorine (CI): <br />PPm <br /> Heat: °F Water/Hot Water Ware Sink Temp: 118 ° F <br />Quaternary Ammonia (QA): PPm Hand Sink Temp: 102° F <br />FOOD ITEM -- LOCATION --TEMP ° F --COMMENTS <br />4 dr display warmer — front counter-- 154.00° F <br />honey crunch corn dog (hot hold) — display warmer-- 145.00° F <br />chili corn dog (hot hold) -- display warmer-- 167.00° F <br />NOTES <br /> <br />Complaint inspection. <br />Manager was not aware of complaint. <br />Per manager corn dogs and chicken sandwiches are held in display warmer for 3 hours max and then discarded, all other <br />items have 4 hour hold time. <br />Observed time log with discard times recorded for items in warmer and hot dog roller. <br />Per manager the corn dogs are placed in the freezer in the back room once received. <br />The corn dogs are fried in the fryer for 8 minutes at 350 F and then placed in the warmer and the time 3 hours from when they <br />were placed is recorded on the time log. <br />The display warmer was 154 F, did not observed any plain corn dog during inspection. The honey crunchy corn dog was 145 <br />F and the chili corn dog was 167 F. <br />The corn dogs discard time was 2:30 PM on the time log. <br />Observed wings and poppers with 12:30 discard time listed. Manager discarded food items during the inspection. <br />Discarded food items are recorded. <br />Follow manufacturer cooking/reheating instructions and do not exceed 4 hour max hold time if food items are not kept at 135 <br />F or above. <br />Probe thermometer available. <br />Discussed report with Beverly Schmidt, Manager. <br />No signature captured. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
