(114115(c)) <br /> #38 Approved/Sufficient Ventilation and Lighting <br /> OBSERVATIONS:Observed the area where the large mixer is located currently has no lighting.Adequate lighting shall be <br /> provided in all areas to facilitate cleaning and inspection where open food is stored, served, and prepared. Correct within 30 <br /> days. <br /> CALCODE DESCRIPTION:Exhaust hoods shall be provided to remove toxic gases,heat,grease, vapors and smoke and be approved by <br /> the local building department. Canopy-type hoods shall extend 6"beyond all cooking equipment.All areas shall have sufficient ventilation <br /> to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window,an air shaft,or a <br /> light-switch activated exhaust fan,consistent with local building codes. Used wiping cloths contain unhealthy levels of bacteria <br /> and can potentially cross-contaminate food items when placed on food contact surfaces. Discontinue practice today. Store <br /> wiping cloths that are still in use inside a bucket containing sanitizing solution at 100 PPM chlorine or 200 PPM quat. Place <br /> unsanitary wiping cloths that are no longer in use inside the dirty linen bag. Correct today. <br /> CALCODE DESCRIPTION:Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3(d-e)) <br /> #45 Floors,Walls, Ceilings; Clean and Maintained <br /> OBSERVATIONS:Observed bare concrete floor in the kitchen. Floor will need to be sealed with commercial rated epoxy <br /> coating to 1/8 inch which is equivalent to 3 coats of epoxy coating within 45 days. <br /> --------------- <br /> Observed mold on the walls of the meat processing room. Clean and remove mold off walls within 15 days. <br /> CALCODE DESCRIPTION:The walls/ceilings shall have durable,smooth,nonabsorbent,light-colored,and washable surfaces. All floor <br /> surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br /> cleanable.Approved base coving shall be provided in all areas,except customer service areas and where food is stored in original <br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
