All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: The dishwasher did not provide any sanitizer when it was run, it was not being used during the <br />inspection. Per staff the new replacement dispensers for the machine were backordered, and are supposed to arrive within <br />1-2 weeks. Manually sanitize utensils with at least 100 ppm chlorine sanitizing solution in 2 comp sink until dishwasher <br />provides 50 ppm chlorine. Corrected on site, utensils will be manually sanitized in 2 comp sink with 100 ppm chlorine until <br />dishwasher is serviced. Email evidence of correction to dafonskaia@sjgov.org within 2 weeks. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Provide 100 ppm sanitizing solution minimum in <br />sanitizer bucket. Correct immediately. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
