INSTEAD, THEY ARE BEING LEFT OVER ICE IN THE THERMALIZER. TEMPS REACH OVER 60 <br />DEGREES BY EARLY MORNING BEFORE THE STORE OPENS AND THEY USE THE SOUP AGAIN. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />FOOD ITEM -- LOCATION -- TEMP ° F -- COMMENTS <br />No Temperature Data Collected <br />COMMENTS AND OBSERVATIONS <br />Complaint inspection. <br />As per Store Manager, she is aware of the complaint. Corrective measures had been taken ( soup was discarded). <br />All soup items received cooked and frozen, stored in the walk in freezer. Frozen packs are pulled to be reheated at 165F and <br />above. Reheated soup is then held on the hot hold unit and any left over are kept in ice bath to cool then stored in the walk in <br />cooler 41F. <br />During my inspection, thermalizer ( reheating unit) water is at 185F. Checked one bag of soup temp, pulled from the <br />thermalizer, that was at 175F. All food items, on the hot hold unit, are at 135F and more. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
