All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The 2-door cooler was observed at 44 F. Adjust unit to provide 41 F or below prior to operation. <br />------------------------------ <br />The steam table's hot holding temperature was not demonstrated during the inspection. Ensure steam table maintains 135 F <br />or higher prior to use to ensure proper hot holding temperatures. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #64 Lack of Proper Owner Identification <br />OBSERVATIONS: The mobile food facility currently lacks name of business in three-inch font, and the name of owner, city, <br />state, and zip code in one-inch font. Post this information on each side of the mobile food unit. Corrected on Site. <br />CALCODE DESCRIPTION: 1. The business name or the name of the operator, city state and ZIP code, and the name of the permittee if <br />different from the business name is not clearly visible on the customer side of the mobile food facility. [§114299(a)] 2. Business or <br />operator name is not at least 3 inches high and address is not one inch high. [§114299(b)] 3. Sign is not in contrasting color with the <br />vehicle exterior. [§114299(b)] 4.
