All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: The front corn dog on the hot dog roller was 118 F and the back corn dog was 131 F, the other items on <br />the hot dog roller were above 135 F. Per manager they were placed on the roller approx 1.5 hours prior. Provide 135 F or <br />above when hot holding PHFs. Corrected on site, the front corn dog was discarded. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. Provide chlorine test strips within 1 week and email evidence of <br />correction to dafonskaia@sjgov.org <br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br />materials shall be provided to measure the applicable sanitization method. Clean today and maintain clean. <br />Observed cardboard on back shelves in walk-in. Remove cardboard and provide cleanable surface today. <br />Observed 2 unsecured 50 lb CO2 cylinders. Keep pressurized cylinders secured to a rigid structure at all times. Correct <br />today. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175).
